- 1 lb boneless chicken tenders or extra-firm tofu, cut into 1-inch pieces
- 1 cup pineapple juice
- 2 tbsp honey or maple syrup
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 cup colorful bell peppers, sliced
- 1 cup broccoli florets
- 2 cups cooked jasmine rice
- 2 tbsp chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Marinate the chicken or tofu in half the pineapple juice, garlic, and soy sauce for 10 minutes.
- In a large skillet, sauté peppers and broccoli in a little oil until crisp-tender.
- Cook the marinated protein in a separate pan until browned, then add remaining pineapple juice and simmer to glaze.
- Serve over warm jasmine rice and garnish with cilantro.

- For a vegan version, replace chicken with extra-firm tofu and honey with maple syrup.
- Glaze the protein by simmering pineapple juice with garlic until slightly thickened.
