Ingredients

- 8 oz spaghetti
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup cooked diced chicken or chickpeas (optional)
- 2 cups marinara sauce
- 1/2 cup shredded mozzarella
- 1 cup colorful bell peppers, thinly sliced
- 2 cups fresh spinach
- Fresh basil for garnish
- Salt and pepper to taste
Instructions
- Cook spaghetti in salted boiling water until al dente; drain.
- In a skillet, heat olive oil over medium heat; sauté garlic until fragrant, about 30 seconds.
- If using chicken, add and cook until no longer pink; or skip for vegetarian.
- Stir in marinara sauce and simmer 5 minutes; fold in peppers and spinach until just wilted.
- Add cooked spaghetti to the sauce; toss to coat.
- Serve with mozzarella sprinkled on top and basil for garnish.
Notes
- Can be made vegan with dairy-free cheese and no chicken.
- For extra kid-friendly fun, add a pinch of edible glitter or omit for a cleaner look.
- Leftovers reheat well; sauce can be made ahead and stored in the fridge for 2 days.
