- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup milk
- 1 large egg
- 1 tablespoon melted butter
- 1 teaspoon vanilla extract
- Blue food coloring or blue spirulina
- Butter for cooking
Instructions
- Whisk flour, sugar, baking powder, baking soda, and salt in a bowl.
- Whisk milk, egg, melted butter, vanilla, and a few drops of blue coloring in another bowl.
- Combine wet and dry ingredients just until smooth; small lumps are fine.
- Heat a nonstick skillet over medium heat and lightly grease with butter.
- Pour 1/4 cup batter for each pancake; cook until bubbles form, flip and cook until golden.
- Serve warm with fruit and a drizzle of syrup or honey.
Notes
- To veganize, use plant-based milk and a flax egg substitute.
- Adjust blue coloring gradually for desired shade.
- Keep cooked pancakes warm in a low oven while finishing the batch.
