- 2 cloves garlic, minced
- 1/2 cup sliced shiitake mushrooms
- 2 green onions, sliced

- 1 teaspoon sesame oil
- Salt and pepper to taste
- Optional toppings: soft-boiled egg, chili oil, toasted sesame seeds
Instructions
- In a pot, combine rice and broth. Bring to a gentle simmer.
- Add ginger, garlic, and mushrooms. Simmer until rice is very soft, about 15 minutes, stirring occasionally.
- Stir in soy sauce and sesame oil. Season to taste with salt and pepper.
- Divide between bowls and top with green onions and optional toppings.
Notes
- Substitute oats for a gluten-free option or use chicken broth for non-vegetarian version.
- Adjust consistency with more broth if you like a thinner porridge.
- For a spicy kick, drizzle chili oil before serving.
