Instructions
- Bloom gelatin in cold water.
- Warm cream, milk, and sugar in a saucepan until heated and sugar dissolves.
- Whisk in apricot puree, vanilla, and lemon juice; remove from heat.
- Stir in dissolved gelatin until fully incorporated.
- Let cool slightly, then spoon into molds or serving glasses.
- Freeze for at least 4 hours until firm.
- Unmold or scoop, garnish with mint and serve.

- Tip: If you prefer a lighter texture, fold in whipped cream after cooling.
- Substitute agar-agar for a vegetarian gelatin alternative; use 1 teaspoon agar-agar with 1 tablespoon water and simmer to dissolve.
