Instructions
- Beat butter and brown sugar until creamy.
- Mix in molasses, egg, and vanilla until smooth.
- Whisk together flour, baking soda, salt, and spices; fold into wet mixture.
- Chill dough 30 minutes for easier handling.
- Roll dough into 1-inch balls, coat in granulated sugar if using.
- Bake at 350°F (175°C) for 9–11 minutes until edges are set and centers look slightly soft.
- Cool on a rack before serving.
Notes
- Chilling helps cookies hold shape in an ornament-like, chewy center.
- For softer centers, remove cookies slightly underbaked and cool on tray.
- Store in an airtight container up to 5 days or freeze dough for future baking.
