- 1 cup mixed colorful bell peppers, diced

Instructions
- Season chicken with salt and pepper.
- Cook chicken in olive oil until golden and cooked through.
- Stir in garlic, lemon zest and juice, simmer 2 minutes.
- Cook rice in chicken stock according to package directions.
- Stir in peppers and corn; fluff rice and combine with sliced chicken.
- Garnish with parsley and serve.
