- 2 tbsp lemon juice
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon (optional)
- 1 egg for egg wash
Instructions
- Whisk flour, sugar, and salt. Cut in butter until crumbly.
- Drizzle ice water, mixing until dough just comes together. Divide, wrap, and chill 1 hour.
- Roll out dough, line pie pan, and add filling. Top with lattice or crust.
- Brush with egg wash and sprinkle with a touch of sugar if desired.
- Bake at 375°F (190°C) for 50-60 minutes, until crust is golden and filling bubbles.
Notes
- Make-ahead: freeze prepared crust or dough for up to 1 month.
- Use lemon juice to brighten berries and prevent browning.
- Chill the dough thoroughly to ensure a flaky crust.
