Instructions
- Preheat oven to 350Β°F (175Β°C). Grease a 12-cup muffin tin or line with paper cups.
- Whisk flour, baking powder, baking soda, salt, and cinnamon together in a bowl.
- In another bowl, whisk eggs, milk, melted butter, honey, brown sugar, and vanilla until smooth.
- Combine wet and dry ingredients just until a uniform batter forms; do not overmix.
- Divide batter evenly among muffin cups, filling about 2/3 full.
- Bake 16-18 minutes until edges are golden and a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a rack to cool completely.
- Optional: brush warm cakes with a little extra honey for a glossy finish.
- Serve warm or at room temperature; dust with powdered sugar if desired.
Notes
- For lighter cakes use cake flour or substitute half the flour with almond flour for a nutty twist.
- To deepen honey flavor, use darker honey.
- Can be baked as a small loaf by adjusting bake time to 28-32 minutes.
