- 1 lb beef chuck, cubed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 potatoes, cubed
- 1 can (14.5 oz) crushed tomatoes
- 2 cups beef broth
- 1 tablespoon paprika (smoked or sweet)
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium-high heat and brown beef; transfer to a plate.
- In the same pot, sauté onion and garlic until translucent.
- Add carrots and potatoes; cook 5 minutes more.
- Stir in crushed tomatoes, beef broth, paprika, cumin, thyme, and bay leaf; bring to a simmer.
- Reduce heat, cover, and simmer 45-60 minutes until beef is tender and sauce thickens.
- Season to taste and garnish with parsley. Serve with crusty bread.
Notes
- Feel free to add mushrooms or bell peppers for extra sweetness.
- To thicken without dairy, dissolve 1 teaspoon of cornstarch in cold water and stir in at the end.
- Leftovers taste even better the next day.
