Instructions
- In a small bowl, warm milk to 110°F and whisk in sugar; sprinkle yeast and let foam 5 minutes.
- Whisk flour, cinnamon, nutmeg, cardamom, and salt in a large bowl.
- Stir in egg, melted butter, orange zest, and foamy yeast mixture to form a dough.
- Knead on a floured surface until smooth and elastic, about 8–10 minutes.
- Place dough in oiled bowl; cover and rise until doubled, about 60 minutes.
- Punch down dough, divide into 12 pieces, shape into buns on a lined baking sheet; second rise 20–30 minutes.
- Bake at 375°F (190°C) for 15–18 minutes until golden; brush with glaze if desired.
Notes
- Proof yeast in warm milk to activate fermentation.
- Do not overproof for best texture.
- For a glossy finish, brush buns with orange glaze while warm.
- Make ahead: refrigerate shaped buns for up to 12 hours and bake later.
