Ingredients

- 4 salmon fillets (6 oz each)
- 2 tbsp olive oil
- 3 tbsp honey
- 2 tbsp soy sauce or tamari
- 1 clove garlic, minced
- 1 tsp lemon juice
- 2 cups mixed greens or asteroid salad
- 1 cup cooked quinoa
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Pat salmon dry, season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat; sear salmon 2-3 minutes per side to color.
- Whisk honey, soy sauce, garlic, and lemon juice to make glaze.
- Brush glaze on salmon, transfer to oven and bake 6-10 minutes until cooked through.
- Toss greens with a light vinaigrette and fluff quinoa.
- Plate salmon over greens and quinoa, drizzle remaining glaze, serve immediately.
Notes
- You can swap salmon for tofu or chicken for non-seafood versions
- Glaze can be prepared by simmering honey, soy, lemon juice until glossy
- To keep the glaze glossy, brush on near the end of cooking
